To prepare, wash and cut your vegetables. I love leaving the onion rounds, not only do they look beautiful but they’re also easy to eat and serve that way. Zucchini sliced a little on the diagonal. Finally, the peppers I like to simply divide into fourths.
For the marinade I like to salt and pepper generously, finely chopped garlic or garlic seasoning.
This is the most simple way to grill veggies, and also a great way to allow the natural flavor of them to shine through.

Grilling vegetables so they are not soggy is about less not more. First, don’t put too much oil on the vegetables before grilling. Instead use a grill crate and spray oil on that.
Also it’s important to not cut vegetables too thin. You are less likely to over cook thicker and larger pieces of vegetables.
