- corn tortillas
- fresh cilantro
- onion

- radish

Now that I’m back in the workforce and working three days a week, dinner time has once again become hectic, hence the slow cooker recipes. What is Carnitas ?
Carnitas means “little meats” in Spanish, and usually refers to the Mexican pork dish: slow roasted pork tacos. The pork is then shredded and roasted in the oven for a crispy and browned finish. Carnitas can be served on its own or as tacos or burritos. Here we made crock pot pork carnitas tacos , but you could certainly just serve this pork with sides of rice, beans and salad or anything else you desire.
What is the Difference Between Carnitas and Pulled Pork?
Carnitas and pulled pork are both cooked slowly for several hours, though seasoning, herbs and spices vary between the two. However, unlike pulled pork, carnitas are also then roasted in the oven to a crispy and browned finish.

Crock Pot Pork Carnitas Tacos
Ingredients
- 2 1/2 lbs pork shoulder/ or tenderloin
- 1 tbsp
lime juice
- 2 tsp
coarse sea salt
- 2 tsp ground cumin
- 1 tsp
chili powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp onion powder
- 1/2 tsp ground black pepper
Garnish for Tacos
- 8 corn tortillas
- 1/2 cup chopped raw onion
- 1/2 cup cilantro
- 2 avocado, slided
- 3 radish, sliced
Instructions
- Place the meat in the slow cooker. Add all the other ingredients to the slow cooker and mix thoroughly to coat the meat with all the herbs and spices.
- Cover and cook on high for 4 hours, or on low for 6-8 hours. When tender, shred the meat by pulling it apart with a fork.
- Serve pork carnitas on warm corn tortillas and top with onions, cilantro, lime juice and any other toppings you desire.
What to Serve with Tacos?
Typically, I like serving tacos with just lots of topics, from fresh cilantro and onion to homemade guacamole. For a more robust meal, consider serving Mexican rice, beans or this delicious Mexican Corn Salad with your taco dinner.
