This ground turkey enchilada dinner has become one of our favorite easy and quick turkey recipes. I should really call this weeknight meal, the lazy girl enchiladas, because it requires very little work. But just because this is a lazy, one pan kind of meal doesn’t mean it isn’t delicious.

The ground turkey and enchilada sauce make this dish a breeze and perfect for weeknight. And you get to load it with your favorite toppings like a big ol’ plate of nachos.

This is one of my favorite ground turkey recipes and one pot meal combinations, and it’s become quite a staple at our house.

Ingredients You Need to Make this Ground Turkey Skillet Recipe

  • olive oil
  • ground turkey
  • yellow onion, chopped
  • garlic cloves, minced
  • salt and freshly ground black pepper, to taste
  • enchilada sauce
  • shredded cheese
  • avocado, halved, seeded, peeled and diced
  • tortilla chips
  • chopped fresh cilantro leaves
  • chopped green onion
  • sour cream
  • salsa

How to Make Loaded Turkey Enchilada Skillet

Sauté onions  in the skillet for a few minutes until translucent. Don’t forget to salt and pepper the onions. Then, add garlic and sauté for another minute before adding the ground turkey.

Once the ground turkey is cooked thoroughly I add the enchilada sauce and cook until the sauce simmers. Once the sauce is hot,  I take the skillet off the heat and add lots of tortilla chips and a medley of Mexican cheeses for a very cheesy enchilada.

A few minutes in the broiler will melt the cheese to perfection and you end up with extra crispy tortilla chips, which you can use to scoop the delicious enchilada flavored meat.

Of course, you could also easily make this easy enchilada skillet recipe with chicken or even beef. You could also opt for a vegetarian enchilada skillet and use your favorite veggies or meat substitute. Personally, I like using organic ground turkey for this recipe to keep it healthy and light.

Easy Ground Turkey Skillet Enchilada Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb organic ground turkey 
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 1/2 cup enchilada sauce
  • salt and freshly ground black pepper, to taste

Toppings

  • 1 cup shredded cheese
  • 1 avocado, halved, seeded, peeled and diced
  • 1 cup tortilla chips
  • 2 tbsp chopped fresh cilantro leaves
  • 1 tbsp chopped green onion
  • 2-3 tbsp sour cream
  • 2-3 tbsp salsa (Medium or Mild)

Instructions
 

  • Pour olive oil in a pan and add onion. Sauté until the onion is translucent (2 to 3 minutes). Add salt and pepper and garlic and cook for a few more minutes. 
  • Add ground turkey and mix the onion and garlic into the ground meat. Cook until the turkey is browned. Add salt and pepper to taste.
  • Add enchilada sauce and continue to cook until the turkey meat has absorbed most of the sauce.
  • Take the pan off the heat. Layer the skillet with tortilla chips and top with shredded cheese.
  • Place skillet in the broiler for 4-5 minutes or until the cheese has melted and the tortilla chips are crispy. Watch your broiler so the cheese and the tortilla chips won't burn.
  • Take the enchilada skillet out of the oven and add favorite toppings. Avocado, sour cream, salsa, cilantro and green onion. Serve immediately with additional tortilla chips on the side.

Lately, I’ve been making this turkey enchilada skillet and swapping out the tortilla chips for baby bell peppers. I still serve the chips on the side, but having this low-carb version has been great and I don’t miss the chips at all. 

Another healthier addition to this easy skillet dinner has been adding shredded zucchini. And yes, I do feel like super mom everytime I sneak in those veggies to the kiddos.  

Once out of the broiler, I like to add sour cream, fresh avocado, cilantro and scallions.
