Ingredients to Make Loaded Turkey Nachos on Sweet Mini Peppers
- lean ground turkey
- tomato sauce
- olive oil
- garlic clove
- onion
- fresh cilantro
- garlic powder
- cumin powder
- mini sweet peppers, halved, washed and seeded
- shredded light cheese
- light sour cream
- avocado
- olives
- cherry tomatoes
- salt & pepper

Mini Sweet Pepper Loaded Turkey Nachos
Ingredients
- 1 lb lean ground turkey
- 1/4 cup tomato sauce
- 1 tbsp olive oil
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1/2 onion, minced
- 1 tbsp fresh cilantro
- 1/2 tbsp garlic powder
- 1 tsp cumin powder
- 15-10 mini sweet peppers, halved, washed and seeded
- 1 cup shredded light cheese
- 1 tbsp light sour cream
- 1 avocado, diced
- 1/4 cup black olives, halved
- 1/4 cup cheery tomatoes, halved
- salt & pepper to taste
Instructions
- Preheat oven to 375 and line a large baking tray with parchment paper. Lightly spray with cooking spray.
- Add olive oil and sauté onion and garlic until translucent. Add ground turkey, garlic powder, cumin and cook until the meat is cooked through. Add tomato sauce and cook for about 5 more minutes, or until the sauce is almost absorbed. Remove from heat.
- Line the mini sweet peppers on your baking tray, cut side up.
- Add the ground turkey mixture to each mini sweet pepper. Top with shredded cheese.
- Bake for 8-10 minutes, until the cheese has melted.
- Remove from the oven. Top with your favorite nacho toppings, such as black olives, cherry tomatoes, drizzle of sour cream, diced avocado and cilantro. Serve immediately.
