Mini Turkey Meatloaf with Green Beans | Easy One Pan Dinner Recipe
This mini turkey meatloaf with green beans is an easy one pan dinner recipe that feels nostalgic but also flavorful, delicious and healthy.
What Makes These Mini Turkey Meatloaf Healthy?
This petite meatloaf dinner recipe is a play on the classic Russian style meat patties (katleti) my grandmother used to make. But, instead of frying these turkey patties, I bake them for a healthier and also a much tender and moist meatloaf.
This meatloaf recipe also uses 93% lean ground turkey, but the loaves still come out juicy and delicious.
I also add a few additional ingredients that really make this an Italian mini turkey meatloaf recipe. In the end, the addition of basil, oregano and a little parmesan cheese make these mini meatloaves irresistible. The final touch is the sweet and spicy glaze.

- 1 lb lean ground turkey
- 1/3 cup bread crumbs
- onion, minced
- egg
- 2 garlic clove, minced
- 1/4 cup fresh basil, finely chopped
- 1 tsp dried oregano
- 1/4 cup grated parmesan cheese
- 1 lb green beans
- salt & pepper to taste
Glaze for the Meatloaves
- 1/2 tbsp soy sauce
- 1 tbsp ketchup
- 1/2 tsp brown sugar
- 1/4 tsp Sriracha
How to Make a Meatloaf from Scratch
Making a meatloaf from scratch is super simple. All you have to do is combine all of the ingredients into one bowl and mix. After you mix your ingredients, simply shape your loaves into individual small patties, but don’t flatten them.
You could also use a muffin tin to make ultra mini loaves or to make a more traditional meatloaf I like using a bread pan. Here is the recipe for an easy turkey meatloaf.
One your meatloaf has cooked about half way it’s time to glaze. Mix up the ingredients and then brush onto the mini loaves. This glaze makes these turkey minis extra flavorful and juicy. Sweet and tangy with a little spicy kick.
Make It an Easy One Pan Dinner Recipe
Did I mention you can make this a one-pan dinner by adding green beans? Half way through cooking your petite turkey loaves simply add green beans. Start by cutting the ends and washing your green beans. Dry the veggies and spread out on the sheet pan with the turkey loaves, drizzle with olive oil, minced garlic, salt and pepper and toss back into the oven for a crunchy and healthy side kick.
For a more nostalgic dinner, I like adding mashed potatoes. There is just something so comforting about homemade mash potatoes and it feels perfect to serve with this dinner.

Ingredients
- 1 lb lean ground turkey
- 1/3 cup bread crumbs
- 1 egg
- 1 onion, minced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- 1/4 cup fresh basil, finely chopped
- 1/4 cup grated parmesan cheese
- 1 lb green beans
- salt & pepper to taste
For the Glaze
- 1/2 tbsp soy sauce
- 1 tbsp ketchup
- 1/2 tsp brown sugar
- 1/4 tsp Sriracha
Instructions
- Preheat oven to 375 and coat a large baking sheet with cooking spray or use wax paper to line the pan.
- Combine turkey, bread crumbs, egg, onion, basil, oregano, grated parmesan, garlic and salt and pepper and mix together.
- Make petite loaves out of the mixture and gently place them on the sheet pan
- Place the mini turkey loaves in the oven for 12 minutes.
- Meanwhile, toss the green beans in olive oil, garlic, and salt and pepper. Also make the glaze.
- Take out the loaves from the oven and gently brush the loaves with the glaze.
- Add green beans to the sheet pan. Place back in the oven and continue to cook for another 15 minutes. Meatloaves are done once they are no longer pink in the center ( 15 minutes or so).
- Take out of the oven, and enjoy.
