Quick Homemade Chicken Soup
The quick homemade chicken soup takes about half hour of prep and about a half hour to cook thoroughly.
The best part about this soup recipe, is that it doesn’t taste like you only spent about a half hour making it.
It’s full of flavor and while it seems daunting to make homemade chicken soup from scratch, after one time you’ll be a pro.
Ingredients
- 1 package Organic Boneless Chicken Breast Strips, washed and dried.
- 2 bay leaves
- 1 cup Harvest Grains Blend
- 2 garlic cloves, chopped
- 1 teaspoon olive oil
- 1 package chopped onion, carrot and celery
- Liter Organic Chicken Broth
- 2-3 cups water
- 1 teaspoon Vegeta or 21 Seasoning Salt
- 1 teaspoon Trader Joe’s Herbes de Provence or your favorite dried herbs
- salt and pepper to taste
Directions
- Heat olive oil in a large pot. Add your chopped vegetables and garlic. Add salt and pepper, generously and two bay leaves. Simmer until vegetables start to become translucent.
- Season your chicken liberally with salt and pepper and Herbes de Provence, and add it to the pot.
- Fill the pot with the entire liter of the chicken broth, then add two-three cups of water.
- Add Vegeta or seasoning salt to the pot and allow to simmer for about 30 minutes.
- Add one cup of the grains half hour after adding chicken. Continue to simmer the soup for another 20 minutes or so.
- Take out the chicken and shred it with two forks. Add the chicken back into the pot.
- Mix the chicken back into the pot, take off the heat and serve immediately.
How to Cut Down on the Prep
When I say quick homemade chicken soup, I mean it. While making soup is typically a process, I cut down on the prep by buying previously chopped veggies.
Trader Joe’s sells chopped onion, celery and carrot package. This chopped vegetable mix is perfect to get your chicken soup started fast.
If you want to make this soup even faster, you could use already cooked chicken, or Rotisserie chicken.
However, I typically use chicken breast or chicken tenders. Instead of making chicken soup from an entire chicken, I make it quick and still homemade with organic chicken breast or tenders.
You could also use chicken thighs, those have a lot of flavor.

What can I add to my chicken soup to give it flavor?
One of my favorite things to add to my soups is Vegeta. It’s an all-purpose dry seasoning mix of dehydrated carrots, turmeric, garlic, and salt.
It can be used on a variety of foods, from pork to chicken, even shrimp. It adds delicious flavor to poultry, meat, fish, soups, stews or sauces. I use it to add flavor to every soup I make.
About 1 tablespoon adds lots of flavor. You could also use seasoning salt to add flavor and a little kick to your quick homemade chicken soup.
You can find Vegeta at World Market and even Walmart. I typically buy the No MSG Vegeta from Amazon.
A good substitute for Vegeta is Trader Joe’s 21 Seasoning Salt.

What makes this quick chicken soup a favorite at our house is definitely the addition of the Harvest Grains Blend from Trader Joe’s.
It’s a blend of Israeli couscous, orzo, baby garbanzo beans, and quinoa.
In general, I think this mix makes the quick homemade chicken soup taste a lot more exciting than the typical homemade chicken noodle soup.
However, you can still make this chicken soup with noodles.
If you are using noodles, I would recommend cooking them separately from the soup pot, and then adding them to your soup.
You could also substitute the grains for rice or just quinoa or just orzo.
Or you could make this quick homemade chicken soup without noodles or any grains.
I like this recipe because it allows me to throw everything in one pot and forget about it for a little while.
And the soup comes together deliciously within an hour without much assistance from me.
