Cauliflower Fried Rice with Shrimp & Pineapple | An Easy Trader Joe’s Recipe
Very easy cauliflower fried rice with shrimp & pineapple packed with delicious flavors. Best of all this dish comes together in about 20 minutes with my favorite go to’s from Trader Joe’s.
Why You’ll Love this Cauliflower Rice & Shrimp Recipe
This pineapple shrimp fried cauliflower “rice” comes together at home in about 20 minutes. I’m using “rice” in quotation marks because this recipe is made with cauliflower rice making it a low carb and paleo fried rice recipe. The tropical shrimp fried rice dish comes together quickly with Trader Joe’s Riced Cauliflower Stir Fry and their frozen shrimp package.
Ingredients List
- Trader Joe’s cauliflower stir fry
- shrimp
- pineapple
- garlic cloves
- soy sauce
- oyster sauce
- sesame oil
If using plain rice you will also need the following*
- rice
- onion
- peas
- corn
- sweet peppers
*feel free to use any stir fry veggies you love, such as carrots, green onions and sweet peppers.
How to Make Shrimp for Pineapple Fried Rice
For me layering of flavor is important, so I start by defrosting and marinating the shrimp. See here for how to defrost seafood. To prepare the shrimp for the tasty cauliflower rice I add a teaspoon of sesame oil and a teaspoon of soy sauce, salt and pepper and one clove of garlic, minced. Mix the ingredients in a bowl with the shrimp and set aside.
Lately, I’ve been using this handy little gadget every time any recipe calls for garlic and honestly I don’t know why I lived so long without it.

Next, I cut my pineapple in half and then work to hollow the fruit out to make a bowl. Does pineapple shrimp fried “rice” need to be served in a pineapple boat? Of course not. But does this make your easy 20 minute dinner from Trader Joe’s feel like you’ve escaped to a tropical island. Absolutely.
Once I hollow out the pineapple, I chop the pineapple meat into small chunks for the fried cauliflower rice. If you’re not using a pineapple as a serving dish, you can simply use fresh or frozen cut pineapple for the recipe.

What Kind of Rice to Use for Fried Rice?
Any rice you have available can be made as fried rice. If you don’t have the packaged cauliflower stir fry from Trader Joe’s you can use prepared brown rice or jasmine rice or plain cauliflower rice.
The trick to a good fried rice is to use cold, previously made rice. Shrimp fried rice tastes best when it has been stir-fried in a wok or a skillet. I typically use a skillet because a wok isn’t something I keep on hand, though I have been eyeing this cast iron one for a while.
Usually fried rice is also made with eggs. I skipped the eggs for this recipe, but you can certainly add eggs if you want.
Pineapple Fried Rice Recipe with Cauliflower Rice
Ingredients
- 16 oz frozen shrimp or 20 shrimp defrosted
- 1 Trader Joe's cauliflower stir fry
- 1 pineapple
- 1 garlic clove, minced
- 2 tbsp soy sauce
- 2 tsp sesame oil
- 1 tsp oyster sauce
If using plain rice you will also need the following*
- 2 cups prepared rice or cauliflower rice, cold
- 1/2 onion, chopped
- 1/2 cup peas
- 1/2 cup corn
Instructions
- Heat one tablespoon of olive oil in a pan and carefully add your shrimp. Turn the shrimp once they are pink, about 3-5 minutes on each side. Set your shrimp aside.
- Return to your pan, and cook the stir fry according to the directions on the Trader Joe's package.
- f you are using plain rice or cauliflower rice, first sauté the veggies of your choice and garlic until they are soft and cooked through. Then add the cold rice and stir to combine.
- Return to your shrimp, take off the tails and chop into small chunks. Add the shrimp to the rice mixture.
- Once the rice has cooked through add the soy sauce and the oyster sauce and the pineapple chunks.
- Continue to cook, stirring gently for another 10 minutes or so.
- Remove the rice from the heat. Taste and add more soy sauce, sesame oil if required.
Notes
- You can leave out the oyster sauce and your fried rice will still be great.
- You can skip the pineapple bowls if you like and use frozen pineapple chunks or buy pre-cut pineapple to save on time. But, if you’re going for the tropical dinner theme the pineapple bowls make for a fun touch.
- Use cold rice. Leftover refrigerated rice is great, so is frozen cauliflower rice. If using fresh, warm rice the stir fry will be soggy.
