A spin on a classic recipe with extra protein and lean meat

A turkey meatloaf is a frequent request at my house,  and I often oblige because it’s easy to throw the ingredients together, toss in the oven for a  while, and go about my business. The egg surprise is an easy addition, but you can also make it without the egg in the middle, and it will still be super moist and yummy meatloaf.

I  like using turkey for my meatloaf. Turkey gets a bad rep for being too dry and most people assume a turkey meatloaf would not be moist or flavorful, but that’s not true. This meatloaf recipe makes for a healthy weeknight meal and a meatloaf that’s both moist and flavorful.

The addition of grated cheese, onions and fresh herbs makes this turkey meatloaf moist and flavorful.

You can also add shredded zucchini to the meat mixture for added moisture. You may also like the mini meatloaf recipe perfect for making individual portions.

How to Add a Hard-Boiled Egg to Your Turkey Meatloaf

My grandmother used to make little turkey patties with an egg in the middle, and as a kid I remember being super confused as to how she could get an egg inside the turkey!

Now, I like adding the hard boiled egg to my super easy turkey meatloaf recipe not only for additional flavor and the aesthetics, but also for an extra boost of protein.

Boil 3-4 eggs separately. Allow them to cool. Then layer the eggs into the pan and cover with the turkey. It makes for a tastier loaf, as well as a pretty one to cut into.
