Overnight Coconut Chia Seeds Breakfast Pudding with Peanut Butter

An easy recipe for the most delicious and nutritious overnight chia seeds pudding made with coconut milk and peanut butter.

  • 4 tbsp chia seeds
  • 1 cup coconut milk
Topping Options
  • 1 tbsp peanut butter
  • 1/2 banana, sliced
  • 2 strawberries
  • 1 tbsp agave or honey

Method
 

  1. Add four tablespoons of chia seeds to a jar or glass of your choice. Top with one cup of milk, I prefer the taste of coconut milk but you can use any milk you like.
  2. Mix the chia seeds well, cover with plastic wrap and place in fridge overnight.
  3. Take out the cup, mix the ingredients again and add toppings of choice.
  4. I like adding banana, scoop of peanut butter, strawberries, blueberries, coconut flakes and a drizzle of agave or honey.
  5. Chia pudding can last in the fridge for up to 3 days.
