Zucchini and Turkey Patties
These baked turkey patties with zucchini are about to become your weekly easy dinner or lunch go-to. Serve them up with a big salad or your favorite grain or pasta.
- 1 lb 1lbs ground turkey
- 2 zucchini, shredded
- 1 medium yellow onion, minced
- 2 garlic clove, minced
- salt & pepper to taste
- 1/2 tsp dried oregano
- 1/2 tsp cayenne powder
Glaze for Turkey
- 1/2 tbsp Ketchup
- 1/4 tsp honey or agave
- 1/4 tsp hot sauce
Avocado Cilantro Dressing
- 1 avocado
- 1/4 cup cilantro, chopped
- 2 garlic clove, chopped
- 1/4 cup low fat sour cream or greek yogurt
- 1 tbsp fresh lemon juice
- 3 tbsp olive oil
- salt & pepper to taste
Combine all the ingredients for the turkey patties in a large bowl and mix until just combined
Create patties and place on a well oiled baking sheet.
Cook at 375 degrees for 20 minutes
Pull patties out of the oven and glaze them.
Place patties back in the oven to broil for 2-3 minutes
To make the Cilantro Avocado dressing
Place all the ingredients In a food processor or blender.
Optional: thin the salad dressing out with water until it reaches a desired consistency.
Keep airtight container 2-3 days.
